- double click
- cmd-down - Finder/default set

Double click a file in the file list to open it using the default application associatied to the given file type. You can also use a keyboard shortcut or the right-click context menu to open a selection of multiple files.
When used on a folder, the Open command will navigate inside that folder. Hit cmd-up or Back (depending on how your keyboard is set) to navigate back to the enclosing folder.
Use the File > Open with... menu or right-click for Open with... to choose the application with which the file will be opened.
Setting default applications to Open specific files is configured through Finder (e.g. the Get Info panel) - at least for the moment.
